Pancake Day, Jeans for Genes Style!

Today is Pancake Day, which can only mean one thing! It’s time to get your bake on and cook up a batch of blue-berry pancakes!

What you’ll need:

  • 200g self-raising flour
  • 1tsp baking powder
  • Pinch of salt
  • 1 egg
  • 300ml milk
  • Knob of butter
  • Packet of blueberries
  • A little oil or butter for cooking
  • Golden or maple syrup

How to make:

  1. In a large bowl, mix together the flour, baking powder and a pinch of salt
  2. In a separate bowl, beat together the egg and milk
  3. Make a well in the centre of the dry ingredients and whisk in the mixture of milk & egg to make a smooth, thick batter
  4. Melt the knob of butter and mix in to the batter
  5. Stir in half the packet of blueberries to the batter
  6. Heat the oil or butter in a large non-stick frying pan
  7. Drop a large tablespoonful of the batter into the pan to make a pancake about 7cm across – you can make 3 or 4 pancakes at once
  8. Cook on a medium heat for about 3 minutes until bubbles appear on the surface of each pancake, then turn and cook for another 2-3 minutes until golden
  9. Serve with golden or maple syrup and the rest of the blueberries
